Ingredients
fresh parsley (1 1/2 cup chopped, with stems discarded)
fresh mint, chopped
medium onion, finely chopped
medium tomatoes, diced
cucumber, peeled, seeded and diced very small
1 tablespoon salt
1/2 teaspoon black pepper
1/2 cup bulghur, medium grade
tablespoons lemon juice
tablespoons extra virgin olive oil
Crushed garlic
Prep Time: 130 minutes
Total Time: 130 minutes
Preparation
Soak bulghur in equal parts bulghar/HOT water for about
an hour to 2 hours. Less time if you like it a little al dente. Combine all the
diced and chopped fresh ingredients.
Next add the salt, pepper, lemon juice, olive oil and
garlic. Mic well.
Dump the softened bulghar in and combine it really well,
so that everything is coating in the oil and lemon juice and garlic.
